Bayberry extract and bayberry powder have wide applicability in the functional food field, and can be applied to solid beverages, dairy products, baked goods, snack foods, and frozen foods and drinks.
For different end-product categories:
1. functional instant products: Bayberry powder contains various vitamins and acids. The powder is easily soluble and has good flowability, making it suitable for making instant solid beverages and instant lozenges. Instant bayberry lozenges can be produced using spray drying and ultrafine grinding technology, overcoming the problems of moisture absorption, clumping, and anthocyanin degradation associated with regular bayberry powder.
2. hypoglycemic gummies: Using bayberry juice as the main ingredient, carrageenan and gelatin as gelling agents, and xylitol as a sweetener, optimized preparation processes and in vitro hypoglycemic efficacy studies have led to the development of bayberry gummies with hypoglycemic functions.
3. natural food additives: Components in bayberries such as myricetin and anthocyanins can be used as food additives, providing natural alternatives in coloring, anti-oxidation, and preservation.
